Review of Felicetti Speciale Pasta - N°46 Spaghetti Peperoncino

This was a real surprise, and a good one. (I thought it would be green, as Peperoncini typically is, but instead it was red.) My guess was that it should pair well with an Asian peanut sauce, such as would be used for the Chinese noodle dish Dan Dan Mein -- in this case Stonewall Kitchen's excellent Garlic Peanut Sauce -- to which I added sliced scallops and some vegetables. But you could substitute chicken, pork, shrimp, or whatever you prefer. The result was outstanding ! Only forgot to add some peanuts, which a capable Chinese restaurant would not have overlooked. But they'd probably prepare it in a wok instead, using some wider noodles. No matter. Anyway, I will definitely be ordering more of this item. Felicetti seems to have claimed the "Mt. Everest" spot in fine pasta.
